I've never flown in a new Taylorcraft before, but one day I might buy one. Could someone tell me the cabin noise in the new Taylorcrafts? Thanks.

Craig's comment was in reference to the struggles that the factory has had in getting into production of new airplanes. There have been reports of customers losing deposits. So be careful before you invest. You can search old posts on this site to get more information.
My TaylorCraft is not new (1946). It has a 65 Hp engine. Like all small airplanes that I've ever flown, it's too noisy for my taste, to be flown without hearing protection. I won't fly without a headset and I strongly prefer to fly with my noise-cancelling headset.Tim Hicks

The Tcraft is one of the best aircraft I have ever flown (in my really long and industious 450 hours of flying). It is easy to maintain, cheap to fly, has a decent cruise and great stall speed. It is really hard to beat or match in it's price range (or anywhere near it's price range).
The key statement in your post is "new Taylorcraft". The challenge in your statement is that one hasn't been produced yet so it is difficult to answer your question. If we base the new ship on the old, a new Taylorcraft would be an incredible plane, especially with an 0200 on the front of it. (no rock throwing! -65 is a great engine too!).
My T has been converted to a BC12D/19 and has a C85 on the front. I love flying it all over the place. I bought it in Montana and flew it back to Texas about 5 years ago (just follow the trail of oil!). Flew it to OSH one year (my avatar is from that trip) and Alliance the next and I am currently planning on going to OSH again this year.
As far as noise, the only aircraft that I haven't had a problem with noise is Big passenger airliners. I wear earplugs on the little passenger airliners. Noise canceling headsets are the only way to fly!

I have found that your first several flights without a headset are really loud but for some reason it gets quieter the more you do it. . . . not only that I can no longer hear my wife ;-)Eric Minnis

(Actually, have you ever noticed that if you put on headsets during a flight, then take them off about halfway through the flight, it seems a lot louder.)
I understand that no single-engine airplane is quiet enough to hear yourself whisper, but I wondered if the newer ones would be almost unbearably loud like the older ones, or about as loud as a Cessna 172 (Noisy, but not so that it damages your ears).

172s will hurt you hearing, it may take a little longer, but it will. Once again, the Taylorcraft doesn't mess around...you KNOW a headset should be worn and ANR is preferred. My 86 F21B is at least as loud and probably louder than I recall my dads 46 BC12D. It has a bigger engine (118HP) and I don't see a muffler anywhere. If a "new" one is ever turned loose and has a muffler, figure in the cost of two good ANR headsets and an intercom in addition to the plane no matter what. You will have a quiet relaxing cockpit and enjoy yourself and your companion much more.Dennis Pippenger
